Preparation

  • Grate the zucchinis and place them in a bowl.

  • After 10 minutes, squeeze out the excess water from the grated zucchini.
  • Mix in the breadcrumbs, smoked scamorza cheese, eggs, chopped parsley, and black pepper.
  • Form the mixture into patties, ensuring they are compact.

Cooking

  • Heat olive oil in a pan over medium heat.
  • Fry the patties until golden brown, about 4-5 minutes on each side.
  • Remove from the pan and let them drain on paper towels before serving.

Notes

Ensure that you thoroughly squeeze the grated zucchini to remove excess moisture. Use fresh breadcrumbs for the best texture. Don’t overcrowd the pan while frying; fry a few patties at a time to maintain even cooking.
