Biscuit Layer

  • 2.5 cups Biscuit Mix (like Bisquick) For the biscuit base
  • 1 cup Water Needed to prepare the biscuit dough

Creamy Layer & Toppings

  • 0.5 cup Sour Cream For creaminess
  • 0.5 cup Mayonnaise Adds richness
  • 0.5 cup Salsa (mild) For a flavorful layer
  • 1.5 cups Cheddar Cheese, Fiesta Blend, shredded Divided for layers and topping

Instructions
 

Preparation

  • Preheat the oven to 350°F.
  • Cook the ground beef in a skillet over medium-high heat until no longer pink, then drain excess fat.
  • In a mixing bowl, combine biscuit mix and water to prepare the dough. Press the dough into a greased casserole dish and bake for 5–8 minutes until set and golden.
  • Add chopped onions and red bell pepper to the cooked beef, stirring for about 4 minutes, then mix in taco seasoning.

Assembly

  • Spread the beef mixture evenly over the baked biscuit layer.
  • In a bowl, mix sour cream, mayonnaise, green chiles, ¾ cup cheese, and garlic powder, then spread over the beef layer.
  • Spoon salsa over the sour cream layer and sprinkle remaining cheese on top.

Baking

  • Bake uncovered for 30 minutes or until hot and bubbly.

Notes

Tips: Drain the beef well to avoid soggy layers. Use room-temperature sour cream and mayo for easier spreading. This casserole can be made a day ahead, just bake when you're ready.
