  • 1 small head Cabbage, chopped Any type of cabbage works, but green cabbage is ideal.
  • 2 pieces Carrots, julienned You can use pre-cut carrots for convenience.
  • 1 whole Bell Pepper, sliced Red, yellow, or green bell peppers all add flavor.
  • 4 pieces Green Onions, sliced Chives can be used as an alternative.
  • 3 cloves Garlic, minced Fresh garlic adds a robust flavor; jarred can suffice.
  • 1 inch Ginger, grated You can substitute ground ginger, but fresh is recommended.
  • 2 tablespoons Soy Sauce Low-sodium soy sauce is an excellent choice.
  • 1 tablespoon Sesame Oil Use toasted sesame oil for enhanced flavor.
  • 8 oz Noodles Rice noodles or soba noodles work well.
  • To taste Salt and Pepper Adjust according to preference.
  • For garnish Sesame Seeds Adds texture and decoration.

Preparation

  • Cook the noodles according to package instructions, then drain and set aside.
  • In a large skillet or wok, heat the sesame oil over medium-high heat.
  • Add the garlic and ginger, and sauté for about 30 seconds until fragrant.

Cooking

  • Add the chopped cabbage, carrots, and bell pepper, and stir-fry for 5-7 minutes until the vegetables are tender.
  • Stir in the cooked noodles and soy sauce, mixing well.
  • Add the green onions and season with salt and pepper to taste.
  • Cook for an additional 2-3 minutes, then serve hot, garnished with sesame seeds.

Notes

Always cook your noodles just until al dente; they will continue to cook when mixed with the hot vegetables. Use high heat when stir-frying to achieve that perfect crispy texture on the vegetables.
