  • 6 slices Bacon Can use turkey bacon for a lighter option
  • 1 cup Heavy cream For a lower-calorie version, substitute with half-and-half
  • 1/2 cup Sun-dried tomatoes Jarred in oil for maximum flavor
  • 2 cups Spinach Fresh spinach preferred
  • 3 cloves Garlic Minced
  • 1/2 cup Parmesan cheese Grated for serving
  • 2 tablespoons Olive oil Extra virgin for best flavor
  • Salt To taste, adjust according to preference
  • Pepper To taste, black or white pepper works

Cooking

  • Heat olive oil in a large skillet over medium heat. Add diced bacon and cook until crispy, about 5-7 minutes.
  • Stir in minced garlic and cook for about 1 minute until fragrant.
  • Add gnocchi to the skillet and pour in heavy cream. Stir to combine.
  • Toss in sun-dried tomatoes and spinach, stirring until the spinach wilts, about 2-3 minutes.
  • Cook until the gnocchi is tender and the sauce thickens, which should take around 5 minutes.
  • Season with salt and pepper to taste, adjusting as needed.
  • Serve hot, topped with grated Parmesan cheese.

Notes

Use fresh gnocchi for better texture and flavor. Do not overcrowd the skillet when cooking the bacon for the best crispiness. Consider adding crushed red pepper flakes for a bit of heat or other vegetables like peas or asparagus for added nutrition.
