Ingredients
  

Veggies

  • 24 pieces Fresh cherry or grape tomatoes Choose firm, evenly sized tomatoes.
  • 1/2 cup Optional diced vegetables: bell pepper or cucumber Finely diced.

Dairy & Protein

  • 8 oz Cream cheese, softened
  • 1 cup Optional bacon bits for topping

Herbs & Spices

  • 1/4 cup Fresh herbs such as dill or chives, finely chopped
  • 1/2 tsp Garlic powder
  • Salt and pepper To taste.

Preparation

  • Cut the tops off the tomatoes and scoop out the insides. Trim a small slice from the stem end and use a tiny spoon or melon baller to hollow each tomato.
  • In a bowl, mix cream cheese with herbs, garlic powder, salt, and pepper. Stir until smooth and well combined, adjusting seasoning to taste.

Assembly

  • Fill each tomato with the cream cheese mixture using a small spoon or a piping bag.
  • Top with bacon bits or diced vegetables if desired.
  • Arrange the tomatoes on a platter for serving. Chill briefly if you prefer them cold.

Notes

Chill the filled tomatoes for about 15 minutes before serving to help the filling set slightly. Store leftovers in an airtight container in the fridge for up to 2 days. If tomatoes leak, pat them dry inside before filling.
