  • 3 large Sweet potatoes Cooked and peeled
  • 1 cup Cottage cheese Blend for smooth texture
  • 2 tbsp Maple syrup Provides sweetness

  • 1/2 tsp Vanilla extract Enhances sweetness
  • 1 Egg Acts as a binder

Streusel Topping

  • 1/2 cup Chopped pecans For streusel topping
  • 2 tbsp Brown sugar Sweetens the topping
  • 1 tbsp Butter Melted for streusel topping

Instructions
 

Preparation

  • Whip the cooked sweet potatoes, blended cottage cheese, maple syrup, cinnamon, vanilla, and egg together until smooth.
  • Spread the mixture in a greased 9×13-inch baking dish.
  • Bake at 350°F (175°C) for 25 minutes.

Streusel Preparation

  • Mix pecans, brown sugar, and melted butter for the streusel topping.
  • Sprinkle the streusel on the baked sweet potato base.
  • Return to the oven and bake for an additional 10–15 minutes until golden and bubbly.

Notes

Ensure sweet potatoes are fully cooked and soft for easy blending. Use full-fat cottage cheese for a richer flavor and creamier texture. Experiment with different nuts such as walnuts or almonds for the streusel topping. Let the casserole cool slightly before serving to allow it to set up.
