Ingredients
  

Syrup
  • 2 1/4 cups blueberries (fresh or frozen)
  • 1 cup granulated sweetener (erythritol, monk fruit blend, or preferred sugar substitute)
  • 1 cup filtered water
  • 1 tsp lemon juice
Soda & Assembly
  • Ice
  • 1 cup club soda (per 2 servings)
  • 1/4 cup sugar free blueberry syrup (homemade from above)
  • 3 tbsp half & half
Toppings (optional)
  • 1/4 cup whipped cream

Method
 

Making the Syrup
  1. In a medium saucepan, combine 1 cup filtered water, 1 cup granulated sweetener, and 1 tsp lemon juice; stir until combined.
  2. Add 2 1/4 cups fresh or frozen blueberries and stir to coat.
  3. Bring the mixture to a simmer over low-medium heat, stirring occasionally — simmer about 15 minutes.
  4. Mash the blueberries with the back of a wooden spoon or a potato masher to release juice.
  5. Turn heat to medium and simmer another 8–10 minutes until slightly thickened.
  6. Remove from heat, let cool a bit, then strain through a fine mesh strainer, pressing solids to extract syrup.
  7. Chill the syrup in the refrigerator for 1–2 hours.
Assembling the Soda
  1. To assemble: add 3–4 ice cubes to a tall glass, fill halfway with club soda, add 1/4 cup blueberry syrup, and slowly pour in 3 tbsp half & half.
  2. Top with whipped cream if desired and stir gently to combine before sipping.

Notes

Use frozen blueberries when fresh aren’t in season. Adjust sweetener in syrup to taste. Dairy-free option: substitute half & half with full-fat coconut milk.
