  • 2 cups frozen strawberries
  • 1/2 cup pineapple juice
  • 1/2 cup unsweetened coconut milk (or any milk of your choice) Dairy-free option
  • 1 tablespoon lemon juice
Sweetener & finishing
  • 2 tablespoons powdered sugar Adjust to taste
Toppings (optional)
  • Fresh strawberry slices
  • Shredded coconut
  • A sprig of mint

Method
 

Preparation
  1. Add frozen strawberries, pineapple juice, coconut milk, and lemon juice to a high-speed blender.
  2. Blend on high until the mixture becomes smooth and creamy, scraping down the sides as needed.
  3. Taste the mixture; then add powdered sugar if you want it sweeter and blend again briefly.
  4. For a soft-serve texture, serve immediately in chilled bowls or cones.
  5. For firmer, scoopable texture, freeze for 30 minutes, then scoop.
  6. Garnish with fresh strawberries, shredded coconut, or a squeeze of extra lemon if desired.

Notes

Use a high-speed blender for the creamiest texture. Chill bowls or cones ahead of time. Variations include adding frozen banana, swapping strawberries for mango, or mixing in Greek yogurt for a tangy version.
