Ingredients

Main Ingredients

  • 1 lb Tender steak (flank or sirloin) Choose high-quality cuts for the best flavor and texture.
  • 1 Red bell pepper Can substitute with orange or yellow bell peppers.
  • 1 Yellow bell pepper See above notes for alternatives.
  • 1 Green bell pepper Fresh peppers enhance the dish; frozen may cause sogginess.
  • 1 Onion Yellow or red onions work best.
  • 2 tablespoons Olive oil Can substitute with vegetable oil or avocado oil.
  • 1 teaspoon Chili powder Adjust according to heat preference.
  • 1 teaspoon Cumin Adds depth to the flavor profile.
  • Salt and pepper Essential for flavor enhancement.
  • 1 cup Cooked rice or quinoa For a lower-carb option, consider cauliflower rice.
  • 1/4 cup Fresh cilantro, chopped Enhances flavor and adds freshness.
  • Zesty chipotle sauce To taste, store-bought or homemade for convenience.

Instructions

Preparation

  • Heat olive oil in a large skillet over medium-high heat.
  • Season the steak with chili powder, cumin, salt, and pepper.
  • Add the steak to the skillet and cook for about 3-5 minutes on each side until it reaches desired doneness. Remove from heat and let it rest before slicing.
  • In the same skillet, add the sliced bell peppers and onion. Sauté for about 5-7 minutes until they are tender and slightly charred.
  • To serve, layer cooked rice or quinoa in a bowl, top with sliced steak, sautéed peppers, and onion.
  • Drizzle with zesty chipotle sauce and sprinkle with chopped cilantro. Enjoy!

Notes

Let the steak rest after cooking to retain juices and enhance tenderness. Use a meat thermometer to check for doneness; 135°F is medium-rare. Sauté vegetables until they are slightly charred for a smoky flavor. For added heat, include diced jalapeños or cayenne pepper in the seasoning. Experiment with different proteins for variety, such as chicken or shrimp. Make it a complete meal by adding black beans or corn as toppings.
