Ingredients
  

For the Dough

  • 1 cup warm milk Warmed to about 105-115°F
  • 2 ¼ teaspoons active dry yeast
  • 2 tablespoons granulated sugar
  • ½ teaspoon salt
  • ¼ cup unsalted butter, melted
  • 3 ½ – 4 cups all-purpose flour Adjust based on humidity

For the Filling

  • 6 large eggs
  • ¼ cup milk or cream
  • to taste salt and pepper
  • 4 ounces cooked ham, diced
  • 5 ounces fresh spinach, roughly chopped
  • 2 tablespoons butter or olive oil For sautéing
  • ½ cup shredded cheese (optional)

For the Egg Wash

  • 1 large egg, beaten
  • 1 tablespoon milk or water

Instructions
 

Preparation of Dough

  • Warm the milk to about 105-115°F.
  • Add yeast and sugar to the warm milk and let it stand for 5-10 minutes until foamy.
  • Add melted butter and salt to the mixture. Gradually add flour, mixing until combined.
  • Knead the dough until smooth and elastic. Let rise in a warm place until doubled, about 1-1½ hours.

Preparation of Filling

  • Whisk together eggs, milk/cream, salt, and pepper.
  • Sauté spinach in butter or oil, then scramble with the egg mixture, adding ham and cheese if using.

Shaping and Baking

  • Punch down the dough, divide into pieces, fill with the egg mixture, seal and place in a baking pan.
  • Bake at 350°F for 18-22 minutes until golden.

Notes

Serve these rolls warm from the oven with a side of fresh fruit or a light salad for a balanced meal. Consider drizzling a bit of hot sauce or adding a dollop of sour cream for an extra kick.
