  • 1/2 pound Smoked sausage (Andouille or Kielbasa) Any smoked sausage works well; adjust according to taste.
  • 1 tablespoon Olive oil Can substitute with vegetable oil if desired.
  • 1 piece Medium onion, diced Shallots can also be used for a sweeter flavor.
  • 2 cloves Garlic, minced Add more if you love garlic.
  • 1 cup Long-grain white rice Brown rice can be used but may require longer cooking time.
  • 4 cups Chicken broth Homemade or store-bought broth works.
  • 1 teaspoon Paprika Smoked paprika enhances the flavor.
  • 1/2 teaspoon Ground turmeric Optional, adds color and health benefits.
  • 1/2 teaspoon Dried thyme Fresh thyme can be a great substitute.
  • 1/2 teaspoon Cayenne pepper (optional) Add according to your heat preference.
  • To taste Salt and black pepper Adjust seasoning as desired.
  • Fresh parsley, chopped For garnish; other herbs, like cilantro, can be used for a different flavor.

Cooking Instructions

  • Heat olive oil in a large skillet over medium-high heat.
  • Add the chicken thighs and sear until golden, then remove and set aside.
  • In the same pan, brown the sliced sausage until nicely caramelized.
  • Add the diced onion and sauté until soft, followed by minced garlic until fragrant.
  • Stir in the rice, paprika, turmeric, thyme, cayenne pepper, salt, and black pepper, coating the rice in the spices.
  • Add the chicken broth, and return the chicken and sausage to the pan.
  • Bring to a simmer, cover, and cook on low for 30-35 minutes.
  • Remove the chicken, shred it, and return the meat to the pan.
  • Stir everything together and cook for another 5 minutes.
  • Garnish with chopped parsley and serve hot.

Notes

Use bone-in chicken thighs for more flavor; they remain moist during cooking. Let the rice sit for a few minutes after cooking for better texture. Be careful not to overcook the rice; it should be tender but not mushy. Garnish with fresh herbs to brighten up the dish before serving. For more variety, consider adding vegetables such as bell peppers or carrots.
