  • 1.5 pounds Boneless skinless chicken tenderloins Can substitute with chicken thighs for a richer flavor.
  • 3 pieces Medium carrots, sliced Other vegetables can be added as per preference.
  • 2 pounds Yukon gold or sweet potatoes, cubed Sweet potatoes will impart a sweeter taste.
  • 6 cloves Garlic, minced Adding roasted garlic enhances the flavor.
  • 0.5 cups Unsalted butter, melted Use salted butter if you prefer a saltier flavor.
  • To taste Salt and black pepper Adjust according to personal preference.
  • 1 teaspoon Dried thyme Fresh thyme can be used for a more vibrant flavor.
  • 1 tablespoon Parsley Hearts of palm or scallions can serve as alternatives.

Instructions
 

Preparation

  • Peel and slice the carrots, wash and cube the potatoes, and mince the garlic.

Layering

  • Layer half of the cubed potatoes and carrots at the bottom of your slow cooker.
  • Sprinkle half of the minced garlic over the veggies, followed by salt and pepper.
  • Place the chicken tenderloins on top of the vegetable layer.
  • Pour melted butter over the chicken, then add the remaining garlic, thyme, salt, and pepper.

Cooking

  • Cover and cook on high for 4 hours or low for 6 to 8 hours until the chicken is tender.

Notes

Use fresh ginger for added flavor; cube potatoes uniformly for even cooking. Optionally, brown the chicken first for deeper flavor, and add spinach or kale in the last hour for a nutritional boost.
