Ingredients

  • 1 lb ground beef
Cheese
  • 1 cup shredded cheese (cheddar or Mexican blend)
Tortillas
  • 4 large flour tortillas
Vegetables
  • 1/2 cup diced bell peppers
  • 1/2 cup diced onions
Spices
  • 1 tsp taco seasoning
  • to taste salt and pepper
Other
  • cooking oil for the grill
  • sour cream or salsa for serving (optional)

Method
 

Preparation
  1. Preheat your Blackstone grill over medium heat and coat it with cooking oil.
  2. In a bowl, mix the ground beef with taco seasoning, salt, and pepper, then form mixture into patties.
Cooking
  1. Grill the patties for about 4-6 minutes on each side, or until cooked through.
  2. Place a tortilla on the grill, add a sprinkle of cheese, the grilled patty, bell peppers, and onions on top.
  3. Top with another tortilla and cook until the bottom tortilla is golden and the cheese melts.
  4. Flip carefully and cook the other side until golden.
  5. Remove from the grill and cut into wedges. Serve with sour cream or salsa if desired.

Notes

Don’t Overmix the Beef: When forming the patties, handle the meat gently to keep it tender. Cheese Melting: Cover the grill with a lid while cooking to help melt the cheese faster. Customize Your Fillings: Feel free to add jalapeños, olives, or any other toppings you love. Watch the Heat: Adjust the grill temperature if the tortillas are browning too quickly; you want them golden, not burnt. Let the Patties Rest: Allow the cooked patties to rest for a minute before assembling to enhance juiciness. For a spicy kick, consider adding chipotle seasoning to the ground beef or tossing in some sliced jalapeños with the bell peppers and onions.
