Main Ingredients

  • 1 lb Shrimp, peeled and deveined Fresh or frozen, thawed
  • 2 cups Fresh spinach Can substitute with kale
  • 1 cup Cherry tomatoes, halved Any small ripe tomatoes work
  • 1 cup Heavy cream Can use half-and-half as a lighter option
  • 1/2 cup Grated parmesan cheese Substitute with mozzarella for a different flavor
  • 3 cloves Garlic, minced Add more for a garlickier flavor
  • 1 teaspoon Italian seasoning Or use a blend of dried herbs

  • Olive oil For cooking; any cooking oil can be used

Instructions

Preparation

  • Preheat your oven to 400°F (200°C).
  • In a large oven-safe skillet, heat olive oil over medium heat.
  • Sauté the minced garlic until fragrant, about 1 minute.
  • Add the shrimp to the skillet and cook until pink, around 2-3 minutes.
  • Stir in the fresh spinach and halved cherry tomatoes, cooking until the spinach wilts.
  • Pour in the heavy cream and add the grated parmesan cheese, Italian seasoning, salt, and pepper.
  • Stir everything together, letting it simmer for a few minutes to combine the flavors.
  • Transfer the skillet to the preheated oven and bake for 15-20 minutes, or until bubbling and golden.
  • Serve warm and enjoy your creamy, garlicky dish!

Notes

Use fresh shrimp for the best taste; if using frozen, ensure they are fully thawed before cooking. Don’t skimp on the garlic; experiment with different types of cheese for varied textures. Taste and adjust seasoning before serving.
