  • 2 ears Corn, cut into pieces Fresh corn is ideal, but frozen works too.

Seasonings and Oils

  • 3 tablespoons Cajun seasoning Adjust to taste for spiciness.
  • 2 tablespoons Olive oil Use extra virgin for a richer flavor.

Instructions
 

Preparation

  • Preheat the grill or oven to 400°F (200°C).
  • Combine in a large bowl the shrimp, sausage, potatoes, corn, Cajun seasoning, olive oil, salt, and pepper.
  • Prepare large pieces of aluminum foil and divide the mixture evenly among them to create packets.
  • Seal the packets tightly to lock in all the flavors.

Cooking

  • Cook the packets on the grill or in the oven for about 20-25 minutes or until everything is fully cooked.
  • Open the packets carefully, as hot steam will escape, and serve with lemon wedges on the side.

Notes

Ensure shrimp are fully thawed and patted dry for even cooking. Cut potatoes evenly to allow for uniform cooking. Seal the foil packets tightly to prevent any steam from escaping. Try adding vegetables like bell peppers or zucchini for extra color and nutrients.
