Ingredients
  

Sauce
  • 1 cup mayonnaise room-temperature for better blending
  • 2 tablespoons lemon juice adjust to taste
  • 1 tablespoon Dijon mustard for flavor depth
Aromatics
  • 1 head garlic roasted
Seasoning & Oil
  • to taste Salt
  • to taste pepper
  • as needed tablespoons olive oil for roasting

Method
 

Preparation
  1. Preheat the oven to 400°F (200°C).
  2. Cut the top off the head of garlic to expose the cloves.
  3. Drizzle the cut head with olive oil, wrap it in foil, and roast for about 30–40 minutes until very soft.
  4. Let the garlic cool until you can handle it, then squeeze the roasted cloves into a small bowl.
Mixing
  1. Add mayonnaise, lemon juice, Dijon mustard, salt, and pepper to the bowl.
  2. Mix until smooth, tasting and adjusting seasoning as needed.
  3. Chill for at least 30 minutes to let flavors meld.
Serving
  1. Serve as a dip or spread.

Notes

Roast garlic until very soft, as underripe cloves can have a sharp flavor. Use room-temperature mayo for a silky blend. Flavors improve after chilling; store up to 5 days. For variations, stir in chopped herbs, Sriracha, or swap half mayo for Greek yogurt.
