Ingredients
  

Sauce

  • 1 cup mayonnaise room-temperature for better blending
  • 2 tablespoons lemon juice adjust to taste
  • 1 tablespoon Dijon mustard for flavor depth

Aromatics

  • 1 head garlic roasted

Seasoning & Oil

  • to taste Salt
  • to taste pepper
  • as needed tablespoons olive oil for roasting

Instructions
 

Preparation

  • Preheat the oven to 400°F (200°C).
  • Cut the top off the head of garlic to expose the cloves.
  • Drizzle the cut head with olive oil, wrap it in foil, and roast for about 30–40 minutes until very soft.
  • Let the garlic cool until you can handle it, then squeeze the roasted cloves into a small bowl.

Mixing

  • Add mayonnaise, lemon juice, Dijon mustard, salt, and pepper to the bowl.
  • Mix until smooth, tasting and adjusting seasoning as needed.
  • Chill for at least 30 minutes to let flavors meld.

Serving

  • Serve as a dip or spread.

Notes

Roast garlic until very soft, as underripe cloves can have a sharp flavor. Use room-temperature mayo for a silky blend. Flavors improve after chilling; store up to 5 days. For variations, stir in chopped herbs, Sriracha, or swap half mayo for Greek yogurt.
