Ingredients
  

For the Fritter Batter

  • 1 cup All-purpose flour
  • 1/4 cup Granulated sugar
  • 1 tablespoon Baking powder
  • 1/4 teaspoon Salt
  • 1 teaspoon Ground cinnamon
  • 1 large Egg
  • 1/2 cup Milk

For the Pineapple

  • 1 whole Fresh pineapple

For Frying

  • 2 cups Vegetable oil

For Topping

  • 1 tablespoon Additional cinnamon and sugar

Preparation

  • Slice the pineapple into 1/2-inch rings, then cut into bite-sized wedges or rounds. Pat dry to remove excess juice.
  • In a bowl, whisk together flour, sugar, baking powder, salt, and ground cinnamon.
  • In a separate bowl, beat the egg and milk together, then fold into the dry mix until just combined.

Cooking

  • Pour vegetable oil into a heavy skillet or Dutch oven to reach about 1/2 inch deep and heat to 350°F.
  • Dip pineapple pieces into the batter, allowing excess to drip off, and carefully place them into the hot oil.
  • Fry for 2–3 minutes per side until golden brown.
  • Transfer fritters to a paper-towel-lined tray to drain, then toss lightly in the cinnamon-sugar mix. Repeat with the remaining pineapple.
  • Serve warm immediately for the best flavor and texture.

Notes

Serve these pineapple fritters drizzled with honey or topped with a scoop of vanilla ice cream. Ensure your oil is hot enough by testing with a small amount of batter; it should bubble and rise immediately. Don’t overcrowd the skillet when frying, as this can lower the oil temperature and result in soggy fritters. For an extra kick, add a pinch of nutmeg to the batter along with the cinnamon. Experiment with different fruits; peaches and apples also make excellent fritters.
