Ingredients
  

Fruit
  • 1 cup fresh pineapple, diced Use ripe but firm pineapple for the best texture.
Veggies & Herbs
  • 1 cucumber, peeled and diced Peel and seed for a milder flavor.
  • 1/4 cup red onion, thinly sliced
  • 1/4 cup fresh cilantro, chopped Substitute with mint for a different flavor.
Dressing
  • 1 lime Juice of 1 lime Adjust lime to balance acidity and sweetness.
Seasoning
  • to taste salt
  • to taste pepper

Method
 

Preparation
  1. Dice the pineapple into 1/2-inch pieces and place in a large mixing bowl.
  2. Peel and dice the cucumber, then add it to the bowl with the pineapple.
  3. Thinly slice the red onion and chop the cilantro, then add both to the bowl.
  4. Squeeze the juice of 1 lime evenly over the ingredients in the bowl.
  5. Season with salt and pepper to taste, then toss gently to combine.
  6. Taste and adjust seasoning if needed.
  7. Serve immediately or chill in the refrigerator for 15-30 minutes before serving for a cooler, melded flavor.

Notes

Great for meal prep or packed lunches as it holds up well chilled. Can be served alongside grilled fish or chicken, or as a topping for tacos.
