Fruits
  • 4 cups sliced peaches Use ripe but firm peaches.
  • 1 cup raspberries Can be replaced with blackberries or blueberries.
  • 1 tablespoon lemon juice
Dry ingredients
  • 1 cup sugar Reduce by 1/4 cup if peaches are very sweet.
  • 1 cup all-purpose flour Can be substituted with gluten-free baking flour.
  • 1.5 teaspoons baking powder
  • 0.5 teaspoon salt
Wet & fat
  • 1 cup milk Can use plant-based milk for a vegan option.
  • 0.5 cup butter, melted Can be replaced with melted coconut oil for a vegan option.
  • 1 teaspoon vanilla extract

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, mix sliced peaches, raspberries, sugar, and lemon juice. Pour the fruit mixture into a greased baking dish.
  3. In another bowl, whisk together flour, milk, melted butter, baking powder, salt, and vanilla until smooth.
  4. Pour the batter over the fruit mixture in the baking dish.
Baking
  1. Bake for 40-45 minutes or until the top is golden brown and the fruit is bubbly.
Serving
  1. Serve warm with a scoop of vanilla ice cream.

Notes

Use ripe but firm peaches to maintain their shape. For a thicker filling, toss fruit with cornstarch. Brush melted butter over the batter before baking for a golden top.
