  • 1/2 cup Grated Parmesan cheese Parmesan adds a savory depth.
  • 1 tsp Italian seasoning Fresh herbs can replace dried for more flavor.
  • Salt and pepper Adjust based on personal preference.
  • 1 tbsp Olive oil Use extra virgin for the best taste.
  • 1/2 Onion, chopped Yellow or white onions work well.
  • 2 cloves Garlic, minced Fresh garlic enhances the aroma.

Instructions
 

Preparation

  • Preheat the oven to 350°F (175°C).
  • Cook the pasta according to package instructions until al dente, then drain.
  • In a skillet, heat olive oil over medium heat. Add chopped onion and garlic, sautéing until soft.

Mixing and Baking

  • In a large bowl, combine pumpkin puree, tomato sauce, Italian seasoning, salt, and pepper. Stir in the cooked pasta and sautéed onion and garlic.
  • Transfer the mixture to a baking dish, and top with mozzarella and Parmesan cheese.
  • Bake for 25-30 minutes, or until the cheese is bubbly and golden.

Notes

Opt for a mix of cheeses to achieve a more complex flavor. Adding spinach or other vegetables can enhance nutrition and flavor profile.
