  • 1 medium head medium head of green cabbage (2–3 pounds), core intact
Oils
  • 2 tablespoons extra virgin olive oil
Cheese
  • ½ cup freshly grated Parmesan cheese

  • 1 teaspoon garlic powder

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. Remove any damaged leaves from the cabbage, then slice it into ¾-inch thick steaks.
Cooking
  1. On a lined baking sheet, drizzle olive oil over each steak and season with salt and pepper.
  2. Mix the Parmesan cheese with garlic powder, then sprinkle generously over the cabbage steaks.
  3. Roast for 25–30 minutes, flipping halfway through, until golden brown and crispy.
  4. Serve hot with a squeeze of lemon and extra grated Parmesan.

Choose a fresh cabbage that's firm and heavy with crisp leaves for the best results. Cut the cabbage steaks uniformly for consistent roasting.
