Ingredients

Pasta
  • 8 oz pasta (penne or rotini) Short pasta works best to hold the sauce.
Produce
  • 2 cups cherry tomatoes, halved
  • 2 cloves garlic, minced
  • Fresh basil for garnish
Sauce & Liquid
  • 1 cup heavy cream For a lighter sauce, use half-and-half.
  • 1 cup vegetable broth Add more if the sauce is too thick.
Spices & Seasoning
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
Toppings
  • Parmesan cheese for serving Freshly grated for best flavor.

Method

Preparation
  1. In a large skillet, combine the pasta, cherry tomatoes, heavy cream, vegetable broth, garlic, and Italian seasoning.
  2. Bring the mixture to a boil over medium-high heat.
  3. Reduce heat to a simmer and stir to keep ingredients from sticking.
  4. Cook for about 12–15 minutes, stirring occasionally, until the pasta is al dente and the sauce has thickened.
  5. Taste and season with salt and pepper to taste.
  6. Serve hot, garnished with fresh basil and Parmesan cheese.

Notes

Serve with a crisp green salad and crusty bread. You can also top with grilled chicken, pan-seared salmon, or toasted pine nuts for added flavor and texture.
