Ingredients
  

For the crust

  • 1 cup graham cracker crumbs
  • 1/4 cup sugar
  • 1/2 cup butter, melted

For the filling

  • 2 cans (14 oz each) sweetened condensed milk
  • 1/2 cup key lime juice
  • 4 large egg yolks

Instructions
 

Preparation

  • Preheat oven to 350°F (175°C).
  • In a bowl, mix graham cracker crumbs, sugar, and melted butter. Press mixture into the bottom of mini pie tins to form crusts.

Filling

  • In another bowl, whisk together sweetened condensed milk, key lime juice, and egg yolks until smooth.
  • Pour the filling into the prepared crusts, dividing evenly.

Baking

  • Bake for about 15 minutes, or until set. Let cool completely.

Chilling

  • Refrigerate for at least 2 hours to fully firm the filling.

Serving

  • Top with whipped cream and garnish with lime slices before serving.

Notes

Press the crust firmly to ensure it holds together when sliced. Let pies cool completely before chilling to avoid condensation. Use fresh key lime juice for the brightest flavor; bottled is okay if needed. Chill at least 2 hours so the filling sets properly for clean slices. Store leftovers covered in the refrigerator for up to 3 days.
