Ingredients
  

For the Salad

  • 1 cup Lentils Any type of lentils can work, but green or brown are best.
  • 2 cups Water To cook the lentils.
  • 1 Bell Pepper, diced Any color is fine, choose your favorite.
  • 1 Cucumber, diced For a crisp texture.
  • 1 cup Cherry Tomatoes, halved For sweetness and color.
  • 1/4 Red Onion, finely chopped For added flavor.
  • 1/4 cup Parsley, chopped Fresh herbs are best for flavor.
  • 3 tablespoons Olive Oil Extra virgin for the best flavor.
  • 2 tablespoons Lemon Juice Freshly squeezed is recommended.
  • Salt and Pepper, to taste Adjust to personal preference.

Instructions
 

Cooking the Lentils

  • Rinse the lentils under cold water and place them in a saucepan with water. Bring to a boil, then reduce heat and simmer for about 20-25 minutes until tender. Drain any excess water and let cool.

Combining the Vegetables

  • In a large bowl, combine the cooled lentils, bell pepper, cucumber, cherry tomatoes, red onion, and parsley.

Mixing the Dressing

  • In a separate small bowl, whisk together olive oil, lemon juice, salt, and pepper.

Tossing the Salad

  • Pour the dressing over the salad and toss to combine.

Serving

  • Serve cold as a refreshing lunch or light dinner.

Notes

Soak lentils for a couple of hours before cooking to reduce cooking time. Feel free to add more vegetables, such as zucchini or carrots, for added nutrients. Marinate the salad for at least 30 minutes before serving for deeper flavor. To up the protein content, consider adding feta cheese or chickpeas. Adjust the dressing according to your taste; adding herbs like dill can enhance the flavor. Refrigerate for 3-5 days in an airtight container.
