  • 1/4 cup Olive oil, extra virgin recommended
  • 2 tablespoons Lemon juice, freshly squeezed

Preparation

  • In a large bowl, combine the chickpeas, kidney beans, cucumber, tomatoes, and parsley.
  • In a small bowl, whisk together the olive oil, lemon juice, salt, and pepper.
