Main Ingredients

  • 2 large Chicken breast (about 1 lb) Flatten slightly for even cooking; boneless, skinless
  • 3/4 cup Sun-dried tomatoes (packed) Oil-packed preferred; substitute roasted red peppers if needed
  • 3 cloves Garlic, minced Fresh garlic gives best aroma; garlic powder in a pinch
  • 3/4 cup Parmesan cheese, freshly grated Use Parmigiano-Reggiano for depth; pre-grated works but is drier
  • 1 1/4 cups Heavy cream Full-fat heavy cream recommended
  • 12 ounces Pasta Fettuccine, penne, or your preferred long or short pasta
  • 2 tablespoons Olive oil Use extra-virgin for flavor; neutral oil tolerable for high heat
  • to taste Salt Season in stages; account for salty Parmesan and sun-dried tomatoes
  • to taste Pepper Freshly ground black pepper preferred
  • 1/4 cup Fresh basil, torn or chiffonade Garnish and brightener; sub with parsley for milder flavor

Instructions
 

Prepare the Pasta

  • Cook the pasta according to package instructions. Drain and set aside.

Sear the Chicken and Build the Sauce

  • Heat olive oil over medium heat in a large skillet until shimmering.
  • Add garlic to the skillet and cook until fragrant, about 30 seconds to 1 minute.
  • Add chicken breast to the skillet, season with salt and pepper, and sear until browned on both sides and cooked through.
  • Stir in sun-dried tomatoes and warm for a minute.
  • Add heavy cream and Parmesan cheese, mixing until creamy and well combined. Let simmer to thicken.
  • Toss cooked pasta in the sauce until thoroughly coated.
  • Garnish with fresh basil and serve immediately with garlic bread and wine.

Notes

Pat chicken breasts dry for better browning. Reserve pasta water for adjusting sauce consistency.
