Preparation

  • Preheat your oven to 425°F (220°C).
  • In a large bowl, mix together the olive oil, maple syrup, Dijon mustard, salt, and pepper until smooth.
  • Add the carrot sticks to the bowl and toss until each piece is evenly coated with the glaze.
  • Spread the carrots in a single layer on a baking sheet.

Cooking

  • Roast for 20-25 minutes, stirring halfway through, until tender and browned at the edges.
  • Remove from the oven, garnish with fresh parsley if desired, and serve warm.

Notes

Cut carrots into even sticks for uniform roasting and texture. Don’t overcrowd the pan; give pieces space to brown. Store leftovers in an airtight container in the fridge for up to 4 days. Make extra glaze to drizzle on reheated carrots.
