  • 1 cup Spinach, chopped Fresh or frozen works.
  • 1/2 cup Sun-dried tomatoes, chopped Opt for oil-packed for richer flavor.
  • 1/2 cup Parmesan cheese, grated Freshly grated is best for melting.
  • Salt and pepper To taste.
  • Fresh basil for garnish Adds freshness and visual appeal.

Preparation

  • Heat olive oil in a large skillet over medium heat.
  • Season the chicken breasts with salt and pepper and add them to the skillet. Cook until browned on each side, about 6-7 minutes per side. Remove the chicken and set aside.
  • In the same skillet, add the minced garlic and sauté for 1 minute until fragrant.
  • Pour in the heavy cream, then add spinach, sun-dried tomatoes, and parmesan cheese. Stir until the cheese is melted and the sauce thickens.
  • Return the chicken to the skillet, coat it with the sauce, and let it simmer for another 5 minutes.
  • Serve hot, garnished with fresh basil for added flavor.

Notes

Ensure the skillet is adequately heated before adding the chicken to achieve a nice sear. Use freshly grated parmesan for the best melting quality in the sauce, enhancing its taste. For a thicker sauce, simmer it longer after adding the cream and cheese to allow it to reduce. Experiment with adding herbs such as thyme or oregano for additional flavor dimensions.
