Ingredients

Dry Ingredients

  • 1 cup All-Purpose Flour Use a gluten-free flour blend for a gluten-free option.
  • 1/2 cup Granulated Sugar Standard white sugar works best.
  • 1/4 teaspoon Salt Balances sweetness.

Wet Ingredients

  • 1/2 cup Unsalted Butter Melted for easy incorporation.
  • 1 large Egg Room temperature for better integration.
  • 1 teaspoon Vanilla Extract Enhances overall flavor.
  • 2 tablespoons Fresh Lemon Juice Lime juice can be substituted.
  • 1 teaspoon Lemon Zest Adds an extra citrus punch.

Fruit

  • 1 cup Fresh Raspberries Or frozen raspberries, thawed.

For Dusting

  • 1 tablespoon Powdered Sugar For dusting before serving.

Instructions

Preparation

  • Preheat your oven to 350°F (175°C). Grease and line an 8×8-inch baking dish with parchment paper, allowing some overhang for easy removal.

Mix Dry Ingredients

  • In a large bowl, whisk together the all-purpose flour, granulated sugar, and salt until evenly combined.

Incorporate Wet Ingredients

  • In a separate bowl, combine the melted butter, egg, and vanilla extract. Add this mixture to the dry ingredients, stirring until just combined.

Add the Raspberries

  • Gently fold in the fresh raspberries, taking care not to break them apart too much.

Prepare the Lemon Mixture

  • In a small bowl, mix together the fresh lemon juice and lemon zest. Set aside.

Layer the Mixtures

  • Pour half of the bar mixture into the prepared baking dish, smoothing it into an even layer. Drizzle the lemon mixture over the top.

Create the Swirls

  • Spoon the remaining batter over the lemon layer. Use a knife to gently swirl the lemon mixture through the batter for a marbled effect.

Bake

  • Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.

Cool and Serve

  • Allow the bars to cool completely in the pan. Use the parchment overhang to lift the bars out, cut them into squares, and dust with powdered sugar before serving.

Notes

Always use room temperature ingredients for better integration into the batter. Do not overmix once the raspberries are added; this helps maintain their shape and keeps your bars from becoming too dense. For a tart flavor, consider adding more lemon juice or zest, adjusting to your taste. Store any leftover bars in an airtight container to maintain their freshness. If using frozen raspberries, ensure they are thawed, drained, and patted dry to avoid excess moisture.
