- In a bowl, whisk together almond milk, Greek yogurt, honey, lemon juice and zest, vanilla extract, and salt until well combined. Make sure the honey or syrup is fully mixed into the yogurt and milk for even sweetness.
- Stir in the chia seeds until evenly distributed. Use a whisk or spoon to break up any clumps so seeds disperse through the liquid.
- Cover the bowl and refrigerate for at least 4 hours or overnight. This gives the chia seeds time to swell and thicken into a pudding texture.
Serving
- Before serving, give it a good stir and add more milk if needed to achieve desired consistency. Adjust sweetness or lemon to taste, and thin with a splash of milk if too thick.
- Serve chilled, garnished with lemon zest or fresh fruits if desired. Divide into jars or bowls and top with berries, nuts, or extra zest.
Notes
Whisk the wet ingredients thoroughly before adding chia to prevent clumps. Refrigerate for at least 4 hours or overnight for the best texture; overnight is ideal. Store in airtight containers for up to 4 days and stir before serving. Use fresh lemon zest for the brightest flavor and avoid zesting the bitter white pith.
