Preparation

  • Preheat the oven to 350°F (175°C).

  • Press the mixture into the bottom of an 8x8 inch baking dish.
  • Bake for about 15 minutes until lightly golden.
  • In another bowl, whisk together the granulated sugar, eggs, lemon juice, lemon zest, salt, and baking powder until smooth.
  • Pour this filling over the baked crust.
  • Bake for an additional 20 minutes until the filling is set.
  • Cool completely, then cut into squares and dust with powdered sugar before serving.
