Irish Potato Farls

Ingredients
  

Potatoes & Binder
  • 2 cups mashed potatoes (cooled, plain or seasoned) Use cooled mashed potatoes for better dough handling.
  • 1 large egg (optional, for binding) The egg is optional but can help with binding.
Dry Ingredients
  • 1 cup all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
Fat & Cooking
  • 2 tablespoons butter Plus more for cooking.

Method
 

Preparation
  1. In a mixing bowl, combine mashed potatoes, flour, baking powder, and salt. If using, add the egg for better binding.
  2. Knead gently until a soft, slightly sticky dough forms; add a little flour if too wet.
  3. Divide the dough into four equal parts and shape each into a flat round about 1/2-inch thick.
Cooking
  1. Heat a skillet over medium heat and melt about 1 teaspoon butter to coat the pan.
  2. Cook each farl 4–5 minutes per side until golden brown and cooked through. Adjust heat so they brown without burning.
  3. Transfer to a plate and keep warm; add more butter to the skillet as needed for the remaining farls.
  4. Serve warm with eggs, bacon, or a pat of butter.

Notes

Use cooled mashed potatoes so the dough isn’t too sticky. Watch closely while cooking to avoid burning. For extra flavor, add herbs or spices to the dough.
