Ingredients
  

For the Chicken

  • 1 lb Chicken Breast Cut into 1-inch chunks
  • 4 tbsp Dijon Mustard Maille preferred for smoother bite
  • 4 tbsp Honey Adjust according to sweetness preference
  • 1.5 tsp Onion Powder N/A
  • 1.5 tsp Garlic Powder N/A
  • 0.5 tsp Smoked Paprika Adds depth of flavor
  • 1 tbsp Avocado Oil Great for cooking; substitute with olive oil if needed

For the Green Beans

  • 1 lb Green Beans Trimmed and halved
  • 2 tsp Garlic Powder For seasoning green beans
  • 1 tbsp Lemon Juice Seeds removed before juicing

For the Rice

  • 2 cups Jasmine Rice Rinsed thoroughly to remove excess starch

Instructions
 

Preparation

  • In a large bowl, combine the chicken chunks, dijon mustard, honey, onion powder, garlic powder, smoked paprika, salt, and pepper. Stir well until the chicken is evenly coated.
  • In a large skillet, heat 1 tablespoon of avocado oil over medium heat.

Cooking

  • Add the marinated chicken to the skillet. Cook for about 8-10 minutes, stirring occasionally, until the chicken is browned and cooked through.
  • While the chicken is cooking, prepare the green beans in a separate skillet. Heat 1 tablespoon of avocado oil over medium heat. Add the trimmed green beans and sprinkle with salt, pepper, 2 teaspoons of garlic powder, and lemon juice.
  • Sauté the green beans for about 5-7 minutes, or until they are bright green and tender-crisp.
  • Meanwhile, rinse the jasmine rice under cold water until the water runs clear. Cook the rice according to package instructions, usually involving a 2:1 water-to-rice ratio. Bring to a boil, then simmer covered until fluffy.

Assembly

  • Once everything is cooked, assemble your bowls. Start with a base of jasmine rice, followed by the honey mustard chicken and green beans on top.

Garnishing

  • Garnish with additional lemon juice or sesame seeds if desired. Serve warm and enjoy your delicious honey mustard chicken bowls!
