Ingredients
  

For the Chicken

  • 4 pieces Chicken breasts Boneless and skinless
  • 1/4 cup Honey Use organic if possible
  • 2 tablespoons Lime juice Freshly squeezed is best
  • 1 tablespoon Olive oil Can substitute with avocado oil
  • to taste Salt and pepper Season as desired

For the Mango Salsa

  • 1 ripe Mango, diced Sweet and juicy
  • 1/2 piece Red onion, finely chopped You can use red or white onion
  • 1 piece Jalapeño, minced Adjust for spice preference
  • 1/4 cup Fresh cilantro, chopped Substitute parsley if needed
  • to taste Lime juice For the salsa

Instructions
 

Marinate the Chicken

  • In a bowl, mix honey, lime juice, olive oil, salt, and pepper. Marinate chicken in the mixture for at least 30 minutes.

Prepare the Grill or Skillet

  • Preheat a grill or skillet over medium-high heat.

Cook the Chicken

  • Cook the chicken for 6-7 minutes on each side or until fully cooked.

Make the Mango Salsa

  • In another bowl, combine mango, red onion, jalapeño, cilantro, and lime juice to make the salsa.

Serve

  • Serve the chicken topped with fresh mango salsa.

Notes

For the best flavor, use fresh lime juice instead of bottled. If possible, let the chicken marinate overnight for deeper flavor absorption. Ensure the chicken is at room temperature before cooking for even cooking. Check the chicken's doneness with a meat thermometer; it should reach 165°F to be safe to eat. Increase the jalapeño for a spicier salsa if you enjoy heat.
