Preparation
- In a large bowl, combine sirloin steak with olive oil, smoked paprika, garlic powder, salt, and pepper. Mix well and marinate for at least 30 minutes.
- Toss shrimp with olive oil, salt, and pepper in another bowl and set aside.
- Melt butter in a saucepan over low heat, add minced garlic and cook until fragrant, about 1–2 minutes. Stir in parsley, lemon juice, and a pinch of salt.
- Thread marinated steak and shrimp onto skewers, alternating between the two. Soak wooden skewers in water for 30 minutes if using.
Grilling
- Preheat grill to medium-high heat (400–450°F). Grill skewers for about 3–4 minutes on each side until steak is desired doneness and shrimp are pink and opaque.
- Remove from grill and drizzle garlic butter sauce over the skewers before serving.
Notes
Cut steak into uniform 1-inch cubes for even cooking. Don’t over-marinate shrimp to avoid a mushy texture. Use a hot grill and oil the grates to achieve good sear marks. Rest skewers for 3–5 minutes after grilling for juices to redistribute.
