  • 2 lbs boneless, skinless chicken thighs (about 8 thighs)
Marinade
  • 1/4 cup olive oil
  • 2 tbsp fresh lemon juice (about 1 lemon)
  • 3 cloves garlic, minced
  • 2 tbsp chopped fresh herbs (rosemary, thyme, or parsley)
Spices
  • 1 tsp kosher salt
  • 1/2 tsp freshly ground black pepper

Preparation
  1. In a bowl, mix olive oil, minced garlic, lemon juice, salt, pepper, and chopped fresh herbs to create a marinade.
  2. Place the boneless chicken thighs in the marinade, ensuring they are well coated.
  3. Cover and refrigerate for at least 30 minutes to let the flavors infuse.
Grilling
  1. Preheat the grill to medium-high heat (about 400°F).
  2. Remove chicken from the marinade and discard the excess marinade.
  3. Grill the chicken thighs for about 6–7 minutes on each side or until fully cooked and juices run clear (internal temp 165°F).
  4. Let rest for a few minutes before serving.

Notes

Pat thighs dry before marinating for better adherence. Oil grill grates to prevent sticking and ensure grill marks. Use an instant-read thermometer for doneness check. Pair with grilled corn, coleslaw, and warm pita or tortillas for a complete meal.
