Ingredients

Veggies

  • 1 pound green beans (fresh or frozen)

Fats & Aromatics

  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 shallot shallot, finely chopped

Toppings

  • 1/4 cup almonds, sliced or slivered
  • 1 lemon Juice of 1 lemon

Seasoning

  • Salt and pepper to taste

Instructions

Preparation

  • Heat olive oil in a large skillet over medium heat.
  • Add the minced garlic and chopped shallot, sautéing until fragrant.
  • Add the green beans and cook until crisp-tender, about 5-7 minutes.
  • Stir in the almonds and cook for an additional 2-3 minutes until the almonds are golden.
  • Remove from heat and squeeze lemon juice over the top.
  • Season with salt and pepper to taste, then serve warm.

Notes

For crisp-tender beans, don’t overcook; start checking at 5 minutes. Use medium heat so garlic and almonds brown gently without burning. If using frozen beans, thaw or add a couple minutes to the cooking time to avoid sogginess.
