Gourmet Blueberry Grilled Cheese

Ingredients
  

For the Blueberry Compote

  • 1 cup Fresh blueberries Use ripe berries; frozen allowed if thawed
  • 2 tbsp Granulated sugar or maple syrup Maple syrup softens acidity and adds depth
  • 1 tsp Fresh lemon juice Balances sweetness
  • 1 tsp Fresh thyme leaves Strip from stems, or use 1/4 tsp dried

For the Sandwich Assembly

  • 6 oz Brie cheese Room temperature, rind removed if preferred
  • 4 slices Sourdough or country bread Cut 3/4-inch thick for structure
  • 2 tbsp Unsalted butter Room temperature for even spreading
  • 1 tsp Honey Optional drizzle for finishing
  • a pinch Black pepper Freshly ground to taste

Instructions
 

Make the Blueberry Compote

  • Combine blueberries, sugar, and lemon juice in a small saucepan over medium heat.
  • Simmer the mixture, stirring frequently, until berries burst and liquids thicken, about five minutes.
  • Remove from heat and stir in half of the fresh thyme leaves, then cool slightly.

Prepare the Bread and Cheese

  • Slice Brie into thin rounds or small pieces for even melting across the bread surface.
  • Spread room-temperature butter evenly on one side of each bread slice.
  • Flip the slices so buttered sides will contact the skillet during cooking.

Assemble and Cook the Sandwich

  • Layer Brie on two unbuttered sides of bread, dividing cheese evenly between sandwiches.
  • Spoon a thin, even layer of blueberry compote over the Brie, avoiding excess juice.
  • Sprinkle remaining thyme and a pinch of black pepper over the compote.
  • Top with the other bread slice, buttered side facing out, and press gently to seal edges.
  • Heat a nonstick or cast-iron skillet over medium-low heat until warm and evenly heated.
  • Place sandwiches in the skillet and cook three to four minutes per side until bread is golden brown and Brie melts.
  • Press the sandwich lightly with a spatula during flipping to encourage contact without squeezing out filling.
  • Remove sandwiches and let rest one minute, then slice diagonally and drizzle honey if desired.

Notes

Cook the compote until slightly reduced to prevent sogginess. Use medium-low heat to avoid burning the bread. Allow resting time before cutting.
