For the Chicken

For Assembly

  • 1.25 cups Garlic parmesan sauce Store-bought or homemade can work.
  • 1.5 cups Freshly shredded mozzarella For maximum melting, use blocks for shredding.

Preparation

  • Preheat the oven to 425°F (220°C). In a large bowl, combine the cubed russet potatoes with olive oil, 1 teaspoon of salt, 1/2 teaspoon of black pepper, garlic powder, and smoked paprika. Toss to coat evenly.

Cooking Potatoes

  • Spread the seasoned potatoes in a single layer on a baking sheet. Roast for 25-30 minutes or until golden brown and tender, stirring halfway through cooking.

Cooking Chicken

  • In a large skillet, melt the unsalted butter over medium heat. Add the bite-sized chicken pieces to the skillet and season with 3/4 teaspoon of salt, 3/4 teaspoon of black pepper, 1.5 teaspoons of paprika, onion powder, Italian seasoning, minced garlic, and red pepper flakes.
  • Sauté the chicken for 5-7 minutes or until cooked through and no longer pink in the center. Remove the skillet from heat.

Combine Ingredients

  • Once the potatoes are done roasting, take them out of the oven and add them to the skillet with the chicken. Pour in the garlic parmesan sauce and mix everything together until combined.

Final Touch

  • Top the mixture with freshly shredded mozzarella cheese. Return the skillet to the oven and bake for an additional 5-7 minutes or until the cheese is melted and bubbly.
  • Remove from the oven, garnish with finely chopped fresh parsley, and serve hot.
