Instructions
 

Preparation

  • Heat 2 tablespoons of olive oil over medium-low heat in a large heavy-bottomed pot or Dutch oven.
  • Add the sliced onions and a pinch of salt, stirring to coat.
  • Cook slowly, stirring every 5 minutes, until onions are deep golden brown and caramelized, about 25-30 minutes.
  • Add the minced garlic and cook for about 1 minute until fragrant.
  • Stir in the tomato paste and cook for another minute to toast it slightly.
  • Add the rinsed lentils, smoked paprika, bay leaf, and vegetable broth. Stir to combine.
  • Increase heat to medium-high and bring the soup to a gentle boil.
  • Lower heat to maintain a simmer, partially cover the pot, and cook until lentils are tender but hold their shape, about 25-30 minutes. Stir occasionally to prevent sticking. Add broth or water if the soup becomes too thick.
  • Remove from heat, fish out the bay leaf, and stir in the apple cider vinegar. Taste and adjust salt and pepper as needed before serving.

Notes

Caramelizing the onions slowly over low heat allows their natural sugars to develop fully, enhancing sweetness and complexity. For added depth, consider using a mix of brown and green lentils. Ensure that the soup doesn’t boil too vigorously; a gentle simmer is ideal. Adding fresh herbs, such as thyme or parsley, during the last few minutes of cooking can brighten the flavors. For a different twist, serve the soup topped with caramelized apples for a sweet contrast.
