Preparation

  • Preheat your oven to 350°F (175°C).
  • Mix together the oats, nuts, seeds, and salt in a large bowl.
  • Heat honey (or maple syrup), oil, and vanilla extract in a small saucepan over low heat until melted and combined.
  • Pour the wet ingredients over the dry ingredients and stir until fully coated.
  • Spread the mixture in a single layer on a baking sheet lined with parchment paper.
  • Bake for 20-25 minutes, stirring once halfway through, until golden brown.
  • Remove from the oven and allow to cool completely.
  • Add any optional dried fruit or chocolate chips once cooled.
  • Store in an airtight container for up to 2 weeks.
