  • 1 lb lean ground turkey Use extra lean for a healthier option
Vegetables
  • 2 medium zucchinis, diced
  • 1 medium yellow onion, diced
  • 1 bell pepper, diced
  • 3 cloves garlic, minced
Seasonings
  • 2 tsp Italian seasoning
  • Salt and pepper to taste

  • 2 tbsp olive oil

Method
 

Preparation
  1. Dice the onion, bell pepper, and zucchini into bite-sized pieces. Mince the garlic.
Cooking
  1. Heat 2 tbsp of olive oil in a large skillet over medium heat. Sauté the onion until translucent, about 3–4 minutes, then add minced garlic and cook for 30 seconds.
  2. Add the ground turkey to the skillet, season with salt and pepper, and cook until browned and cooked through, about 5–7 minutes, breaking it up with a spatula.
  3. Stir in the diced zucchini and bell pepper along with 2 tsp of Italian seasoning. Cook until the vegetables are tender yet still slightly crisp, about 4–5 minutes.
  4. Taste and adjust seasoning if necessary. Serve hot, garnished with fresh herbs or a sprinkle of cheese if desired.

Notes

Serve over cooked rice, quinoa, or alongside crusty bread. For low-carb options, serve over spinach or with steamed broccoli.
