Ingredients

  • 1 cup all-purpose flour
  • 1/2 cup butter, softened
  • 1 large egg
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
For the Cream Cheese Topping
  • 8 oz cream cheese, softened
  • 1/4 cup sugar
  • 1 teaspoon vanilla extract
For the Fruit Topping

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C).
  2. In a mixing bowl, cream together the brown sugar and softened butter until smooth.
  3. Add the egg to the mixture and mix until well combined.
  4. In another bowl, whisk together the flour, baking soda, and salt.
  5. Gradually add the dry ingredients to the creamed mixture, mixing until fully combined.
  6. Spread the dough onto a greased pizza pan, forming a round shape.
  7. Bake for 10-12 minutes or until the crust is golden brown. Let it cool completely.
Topping
  1. In a separate bowl, beat together the cream cheese, sugar, and vanilla until smooth.
  2. Spread the cream cheese mixture evenly over the cooled cookie crust.
  3. Arrange your favorite fruits on top of the cream cheese layer.
  4. Slice and serve chilled!

Notes

Serve chilled, garnished with a sprinkle of mint for added freshness. Cool completely before adding the cream cheese layer to prevent melting. Use seasonal fruits for enhanced flavor.
