  • 2 tbsp Olive Oil (30 ml) Can substitute with vegetable oil
  • 1 tsp Chili Powder (2 g) Adjust according to spice preference
  • 1/2 tsp Ground Cumin (1 g) Adds a warm flavor
  • 1/2 tsp Garlic Powder (1 g) Fresh minced garlic can be used as an alternative
  • to taste Salt and Pepper Essential for enhancing flavors
  • 8 small Tortillas Can use corn or flour
  • 1 Lime Cut into wedges for serving
  • Optional Toppings Sliced avocado, chopped cilantro, crumbled queso fresco, sour cream, hot sauce

Instructions
 

Preparation

  • Drain and rinse the black beans thoroughly.
  • Measure out the frozen corn and spices.
  • Prepare the tortillas and slice any desired toppings.

Cooking the Filling

  • Heat a large skillet over medium heat.
  • Add olive oil and allow it to warm until shimmering but not smoking.
  • Spread the frozen corn in a single layer in the skillet.
  • Let it sit undisturbed for 2 minutes, then stir occasionally until golden and toasted, about 5-7 minutes total.
  • Add the black beans, chili powder, cumin, garlic powder, salt, and pepper.
  • Stir gently to coat everything, cooking until the beans start to crisp, about 4-5 minutes.

Preparing the Tortillas

  • Warm the tortillas in a separate dry skillet over medium heat for 2-3 minutes or wrap them in a damp towel and microwave for 30 seconds.
  • Assemble the tacos by spooning the corn and bean mixture onto each tortilla.
  • Top with your choice of toppings and a squeeze of lime.
