Ingredients

Main Ingredients

  • 1 pound Chicken breast, diced Boneless, skinless works best.
  • 1 cup Orzo pasta Can substitute with rice if necessary.
  • 8 ounces Mushrooms, sliced Use button or cremini mushrooms.
  • 1 cup Chicken broth Low sodium preferred.
  • 1/2 cup Marsala wine Sweet Marsala enhances flavor.
  • 1 cup Heavy cream For a lighter version, use half-and-half.
  • 2 tablespoons Olive oil Extra virgin adds extra flavor.
  • 1 Onion, chopped Yellow or white onions work well.
  • 3 cloves Garlic, minced Fresh garlic adds depth.
  • Salt and pepper Adjust based on preference.
  • Fresh parsley, for garnish Chopped for presentation.

Instructions

Cooking Steps

  • Heat olive oil in a large skillet over medium heat. Add the diced chicken and cook until golden brown.
  • Add onions and garlic, sautéing until soft.
  • Stir in the mushrooms and cook until they're browned.
  • Pour in the Marsala wine and let it simmer for a few minutes.
  • Add chicken broth and bring to a boil, then stir in the orzo.
  • Reduce heat and simmer for about 10 minutes, or until orzo is cooked.
  • Stir in the heavy cream, and season with salt and pepper to taste.
  • Serve hot, garnished with fresh parsley.

Notes

Ensure chicken is diced evenly for consistent cooking. Use a non-stick skillet for easy stirring and cleanup. Monitor the orzo to avoid overcooking; it should be al dente. Optional: add spinach for a nutritious boost and color contrast. Pair the dish with a side of crusty bread for a complete meal. Try adding grated Parmesan cheese for extra flavor.
