Ingredients
  

For the crust

  • 1.5 cups Digestive Biscuits Substitute with graham crackers if desired.
  • 0.5 cups Unsalted Butter Ensure melted for the best texture.

For the cheesecake filling

  • 3 packages Cream Cheese Choose full-fat for the richest flavor.
  • 1 cups Granulated Sugar Adjust to taste.
  • 3 large Eggs Ensure at room temperature.
  • 1 teaspoon Vanilla Extract Pure extract is recommended.
  • 1 cup Caramel Sauce Store-bought or homemade for extra luxury.

Instructions
 

Prepare the Base

  • Crush the digestive biscuits or graham crackers in a food processor until they resemble fine crumbs.
  • Melt the unsalted butter and mix it with the crushed biscuits until well combined.
  • Press the biscuit mixture into the bottom of a 9-inch springform pan, ensuring it’s compact and even.

Prepare the Cheesecake Filling

  • Preheat your oven to 325°F (160°C).
  • In a large mixing bowl, beat the cream cheese until smooth using an electric mixer.
  • Add the granulated sugar gradually and continue to beat until fully incorporated and creamy.
  • Add eggs one at a time, mixing on low speed until just combined. Ensure not to overmix.
  • Stir in the vanilla extract until evenly distributed.
  • Pour the cheesecake filling over the prepared base and smooth the top with a spatula.

Bake the Cheesecake

  • Bake in the preheated oven for about 55-60 minutes, or until the edges are set but the center still has a slight jiggle.
  • Turn off the oven, crack the oven door, and let the cheesecake cool in the oven for about an hour.
  • Remove from the oven and let cool completely at room temperature before refrigerating for at least 4 hours, or overnight if possible.

Add the Caramel Sauce

  • Once cooled, drizzle the caramel sauce generously over the top of the cheesecake.

Notes
