Preparation

  • Preheat your oven to 350°F (175°C).
  • Beat the softened butter and granulated sugar together in a large mixing bowl until light and fluffy.
  • Add in the egg yolks and vanilla extract; continue mixing until thoroughly combined.
  • In a separate bowl, whisk the all-purpose flour, cake flour (if using), and salt together.
  • Slowly incorporate the dry ingredients into the butter mixture, mixing until just combined. Add milk as necessary to achieve the right consistency.

Baking

  • Using a cookie scoop or spoon, drop rounded tablespoons of dough onto a baking sheet lined with parchment paper.
  • Sprinkle coarse sugar on top of each cookie, if desired.
  • Bake in the preheated oven for 15-20 minutes, or until the edges are lightly golden.
  • Once baked, remove the cookies from the oven and let them cool on a wire rack.

Notes
