Ingredients
  

For the Dressing
  • ¾ cup Greek yogurt or plain full-fat
  • 1 ½ tablespoon extra virgin olive oil
  • 1 ½ tablespoon lemon juice
  • ¼ teaspoon garlic, grated
  • ½ teaspoon fine salt
  • teaspoon black pepper
For the Salad
  • 1 ½ lb cucumbers, sliced
  • ½ each red onion, finely sliced
  • ¼ cup fresh dill, chopped

Method
 

Preparation
  1. In a small bowl, stir together the Greek yogurt, olive oil, lemon juice, garlic, salt, and pepper until well combined and smooth. Set aside.
  2. Slice the red onion and cut the cucumbers in half lengthwise, then slice each half into 3mm thick slices.
Mixing
  1. In a large salad bowl, combine the cucumber, onion, and dill. Add the dressing and toss to coat the salad ingredients well.
  2. Taste and adjust seasoning with more salt or lemon juice if needed.
Serving
  1. Serve immediately at room temperature or refrigerate until ready to serve.
