  • 1 can (14 oz) Diced tomatoes Undrained.
  • Salt and pepper Enhance the flavors to preference.
  • Tortillas For serving, flour or corn based on preference.

Preparation

  • Place the chicken breasts at the bottom of the crockpot.
  • Add the sliced bell peppers and onion on top of the chicken.
  • Sprinkle the fajita seasoning over the mixture and pour the diced tomatoes with their juice on top.
  • Season with salt and pepper.
  • Cook on low for 6-8 hours or on high for 3-4 hours, until the chicken is cooked through and tender.
  • Shred the chicken in the crockpot using two forks and stir to combine with the veggies.
  • Serve in tortillas with your choice of optional toppings.
