Ingredients

Main ingredients

  • 2 cups Broccoli florets Use small, bite-sized florets for even cooking; frozen, thawed broccoli works in a pinch.
  • 1/2 cup Grated parmesan cheese Use freshly grated for best melt and adhesion; Pecorino Romano is an alternative.
  • 1/2 cup Breadcrumbs Plain or panko for extra crunch; gluten-free breadcrumbs work as a substitute.
  • 2 cloves Garlic, minced Fresh minced garlic yields more aroma than powdered garlic.
  • 2 tablespoons Olive oil Extra-virgin for flavor; avocado oil can be used for a higher smoke point.
  • Salt and pepper Start with 1/4 teaspoon salt and adjust after baking if needed.

Instructions

Phase 1: Preheat and Prepare

  • Preheat the oven to 400°F (200°C).
  • Line a baking sheet with parchment paper for easier cleanup and to prevent sticking.

Phase 2: Combine Ingredients

  • Combine the broccoli florets, parmesan cheese, breadcrumbs, minced garlic, olive oil, salt, and pepper in a bowl.
  • Mix until the broccoli is well-coated and the cheese and breadcrumbs adhere evenly to each floret.

Phase 3: Bake and Finish

  • Spread the mixture onto a baking sheet in a single layer, leaving space between florets for circulation.
  • Bake for 15–20 minutes, or until golden and crispy, rotating the pan halfway through for even browning.
  • Let cool slightly before serving so the coating sets and the bites firm up for easy picking.

Notes

Trim broccoli into uniform, bite-sized florets to produce even cooking and consistent crispness across pieces. Toss florets thoroughly but gently so the parmesan and breadcrumbs cling without breaking the broccoli apart. Use panko breadcrumbs for an extra-crunchy exterior, and toast them lightly in a dry skillet if you want additional color before mixing. Ensure a single layer on the baking sheet so hot air circulates and each piece browns rather than steams. Rotate the baking sheet halfway through the bake to correct for hot spots and achieve uniform golden color.
